- 4 Russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon garlic powder
- ¼ teaspoon black pepper
- ½ cup shredded cheese (cheddar or blend)
- Parsley and/or chives to garnish (finely chopped, optional)
Rinse and then cut the potatoes into wedges, leaving the potato skins on. Add the cut potatoes to a medium bowl and cover with cold water. Let them soak in cold water for 25-30 minutes (it will make them crispy).
Drain the water and pat the sliced potatoes dry with paper towels. Return them to the bowl. Coat potatoes with olive oil, paprika, salt, garlic powder, and black pepper.
Place the seasoned potato wedges into the air fryer basket. Air fry the potatoes at 400 degrees F for 20-25 minutes, flipping and tossing halfway.
Open the basket and sprinkle the cheese onto the potato wedges. Air fry the cheese covered potatoes at 400 degrees F for about 2 minutes, or until the cheese is melted.
Remove the cheesy potatoes from the basket. Garnish with parsley and/or chives and serve.
