Air Fryer Cheesy Potatoes combine the irresistible flavors of potatoes and cheese while offering a surprisingly healthy twist.

Ingredients
  

  • 4 Russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ½ cup shredded cheese (cheddar or blend)
  • Parsley and/or chives to garnish (finely chopped, optional)

Instructions
 

  • Rinse and then cut the potatoes into wedges, leaving the potato skins on. Add the cut potatoes to a medium bowl and cover with cold water. Let them soak in cold water for 25-30 minutes (it will make them crispy).
  • Drain the water and pat the sliced potatoes dry with paper towels. Return them to the bowl. Coat potatoes with olive oil, paprika, salt, garlic powder, and black pepper.
  • Place the seasoned potato wedges into the air fryer basket. Air fry the potatoes at 400 degrees F for 20-25 minutes, flipping and tossing halfway.
  • Open the basket and sprinkle the cheese onto the potato wedges. Air fry the cheese covered potatoes at 400 degrees F for about 2 minutes, or until the cheese is melted.
  • Remove the cheesy potatoes from the basket. Garnish with parsley and/or chives and serve.
