Baked Feta Chicken

Ingredients
  

  • 5 chicken thighs (bone and skin in, trim excess fat)
  • Salt (to taste)
  • 1 medium yellow onion (halved and thinly sliced)

For the rub

  • 3 tablespoons tomato paste
  • 1 tablespoon olive oil
  • ½ cup feta cheese (crumbled)
  • 2 tablespoons fresh lemon juice
  • 3 garlic cloves (minced)
  • 1 teaspoon dry oregano
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper

Instructions
 

  • Heat oven to 425 degrees F.
  • Make the rub. In a small bowl, combine the rub ingredients. Whisk until everything is incorporated.
  • Season the chicken thighs with salt. Then, rub the chicken with the tomato rub on both sides.
  • Prepare a 8” X 11” baking dish (9” X 9” baking dish will work too). Brush the bottom of the dish with extra virgin olive oil. Arrange the sliced onions on the bottom. Arrange the chicken on top of the onions. Pour in about ¼ cup of water to the baking dish.
  • Bake in the middle of a rack for about 35 minutes. Make sure the chicken reaches an internal temperature of 165 degrees F. Enjoy!
