Ingredients
  

  • 16 ounces potato gnocchi
  • 1 tablespoon olive oil
  • 1 ½ cups zucchini (diced)
  • ½ cup yellow bell pepper (diced)
  • 1 cup tomatoes (chopped)
  • 4 eggs
  • Salt and black pepper (to taste)
  • Garnish: green onions (finely chopped)

Instructions
 

  • Cook and drain gnocchi according to package directions.
  • While the gnocchi are cooking, add olive oil to a large skillet over medium heat. Sauté diced zucchini and peppers until tender.
  • Gently stir in gnocchi. Add tomatoes and carefully stir to coat. Season with salt and black pepper to taste.
  • Make four holes in the hash and crack eggs into the holes. Season eggs with salt and black pepper and cook to the desired doneness. Garnish with green onions and serve.
