Cottage Cheese Banana Bread

Ingredients
  

  • 3 ripe bananas (mashed)
  • 2 eggs
  • ½ cup cottage cheese
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 cups white whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • Optional: crushed walnuts (1/3 cup) and/or chocolate chips (1/3 cup)

Instructions
 

  • Preheat oven to 350 degrees and line a bread pan with parchment paper.
  • In a large bowl, mix together the bananas, eggs, cottage cheese, maple syrup and vanilla until smooth.
  • Then, in another bowl, combine white whole wheat flour, baking soda, baking powder, and cinnamon.
  • Add flour mixture to the batter and mix just until well combined. Optional: fold crushed walnuts and/or chocolate chips.
  • Add batter into prepared pan. Bake until golden brown and a toothpick inserted into the center comes out clean, about 50 minutes (cover with foil after about 30 minutes).
  • Remove from the oven. When the bread has sat for about 15 minutes, transfer to a cooling rack and cool completely.
  • Slice and enjoy!
