Pesto Cod Recipe (four ingredients)

Ingredients
  

  • 1 ¼ pounds boneless and skinless cod fillets (four pieces)
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • cup tomato pesto (or your favorite pesto variety)
  • Grated Parmesan cheese (to taste) (optional)
  • Chopped fresh basil or parsley (to taste) (optional)

Instructions
 

  • Preheat oven to 400°F . Line a sheet pan with parchment paper and set aside.
  • Pat the cod dry of excess moisture with paper towels. Place the cod pieces onto the prepared sheet pan and season with salt and black pepper.
  • Distribute pesto over top of each piece of cod.
  • Bake the cod for 16 to 18 minutes (depending on the thickness of your fish) or until it's cooked through. Garnish with grated Parmesan cheese and/or parsley (optional).
