Pesto Cod Recipe (four ingredients)

- 1 ¼ pounds boneless and skinless cod fillets (four pieces)
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
- ⅓ cup tomato pesto (or your favorite pesto variety)
- Grated Parmesan cheese (to taste) (optional)
- Chopped fresh basil or parsley (to taste) (optional)
Preheat oven to 400°F . Line a sheet pan with parchment paper and set aside.
Pat the cod dry of excess moisture with paper towels. Place the cod pieces onto the prepared sheet pan and season with salt and black pepper.
Distribute pesto over top of each piece of cod.
Bake the cod for 16 to 18 minutes (depending on the thickness of your fish) or until it's cooked through. Garnish with grated Parmesan cheese and/or parsley (optional).
