Thai Peanut Zucchini Noodles

Thai Peanut Zucchini Noodles make a perfect light meal. This recipe is fresh, delicious and very easy to prepare.

Ingredients
  

  • 3 medium zucchini (spiralized)
  • 2 carrots (thinly sliced)
  • 1 tablespoon chopped cilantro
  • 3 tablespoons unsalted dry roasted peanuts

Thai Zucchini Sauce

  • ¼ cup creamy peanut butter
  • 2 tablespoons low sodium soy sauce
  • 2 tablespoons maple syrup
  • 1 ½ tablespoons rice vinegar
  • 1 teaspoon freshly grated ginger
  • 1 teaspoon minced garlic
  • Red pepper flakes (to taste)

Instructions
 

  • In a small mixing bowl, add in all sauce ingredients and whisk until smooth. Taste and adjust, if needed. Set aside.
  • Heat a large non-stick skillet over medium high heat. Once skillet is hot, add zucchini noodles and carrots. Cook until water releases and zucchini are just cooked (tender but still crisp). Stir regularly.
  • Add the sauce and toss noodles and carrots in sauce until evenly coated. Cook for another 1 - 2 minutes, stir regularly. Garnish with cilantro and peanuts before serving.
