Eggs
- 6 eggs
- 3 tablespoons mayonnaise
- 1 teaspoon dijon mustard (or to taste)
- ¼ teaspoon Cajun seasoning
- Salt and black pepper (to taste)
- Green onions or chives for garnish
Shrimp
- 12 medium uncooked shrimp (peeled, deveined, tails off)
- 1 tablespoon olive oil
- 1 teaspoon Cajun seasoning
Place the eggs in a single layer in a saucepan, cover with water and bring to a boil. Lower the heat to medium-low and simmer for 10 minutes.
Transfer the eggs to a bowl of ice water to cool completely, then peel them. Slice eggs in half lengthwise and remove yolks. Set whites aside.
Mash yolks with a fork in a small bowl. Stir in mayonnaise, mustard, Cajun seasoning, salt, and pepper. Set the filling aside while you prepare the shrimp.
Shrimp
In a large skillet, add olive oil. Add the Cajun seasoning, stirring to combine.
Spread the shrimp into an even layer in the skillet and cook for 2-3 minutes on each side. Be careful not to overcook. Once cooked, remove the shrimp from the skillet.
