Cajun Deviled Eggs with Shrimp

Ingredients
  

Eggs

  • 6 eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon dijon mustard (or to taste)
  • ¼ teaspoon Cajun seasoning
  • Salt and black pepper (to taste)
  • Green onions or chives for garnish

Shrimp

  • 12 medium uncooked shrimp (peeled, deveined, tails off)
  • 1 tablespoon olive oil
  • 1 teaspoon Cajun seasoning

Instructions
 

  • Place the eggs in a single layer in a saucepan, cover with water and bring to a boil. Lower the heat to medium-low and simmer for 10 minutes. 
  • Transfer the eggs to a bowl of ice water to cool completely, then peel them. Slice eggs in half lengthwise and remove yolks. Set whites aside.
  • Mash yolks with a fork in a small bowl. Stir in mayonnaise, mustard, Cajun seasoning, salt, and pepper. Set the filling aside while you prepare the shrimp.

Shrimp

  • In a large skillet, add olive oil. Add the Cajun seasoning, stirring to combine.
  • Spread the shrimp into an even layer in the skillet and cook for 2-3 minutes on each side. Be careful not to overcook. Once cooked, remove the shrimp from the skillet.

Assembly

  • Stuff or pipe egg yolk mixture into egg whites. Top each deviled egg with a Cajun shrimp.
  • Sprinkle with green onions or chives. Keep refrigerated until ready to serve.
