Chipotle Chicken Chili

- 3 chicken breasts (boneless, skinless)
- 2 cans (15 ounces each) black beans (rinsed and drained)
- 2 cans (14-1/2 ounces each) diced tomatoes (undrained)
- 1 cup water
- 1 large onion (finely chopped)
- 2 chipotle peppers in adobo sauce (finely chopped)
- 2 tablespoons adobo sauce
- 2 garlic cloves (minced)
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- ½ teaspoon salt (or to taste)
- ½ teaspoon ground black pepper (or to taste)
- Optional toppings: shredded cheese, reduced-fat sour cream, minced fresh cilantro and/or lime wedges
Add chicken breasts to a 5-6 quart slow cooker. Sprinkle the cumin, oregano, salt and pepper over the chicken.
Add beans, tomatoes, onion, chipotle peppers, adobo sauce, water and garlic to the slow cooker. Stir.
Cook on low for 5-6 hours or until meat is tender.
Shred the chicken and add additional salt and pepper to taste. Serve with toppings of your choice.
