Chipotle Chicken Chili

Ingredients
  

  • 3 chicken breasts (boneless, skinless)
  • 2 cans (15 ounces each) black beans (rinsed and drained)
  • 2 cans (14-1/2 ounces each) diced tomatoes (undrained)
  • 1 cup water
  • 1 large onion (finely chopped)
  • 2 chipotle peppers in adobo sauce (finely chopped)
  • 2 tablespoons adobo sauce
  • 2 garlic cloves (minced)
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon ground black pepper (or to taste)
  • Optional toppings: shredded cheese, reduced-fat sour cream, minced fresh cilantro and/or lime wedges

Instructions
 

  • Add chicken breasts to a 5-6 quart slow cooker. Sprinkle the cumin, oregano, salt and pepper over the chicken.
  • Add beans, tomatoes, onion, chipotle peppers, adobo sauce, water and garlic to the slow cooker. Stir.
  • Cook on low for 5-6 hours or until meat is tender.
  • Shred the chicken and add additional salt and pepper to taste. Serve with toppings of your choice.
