Corn Tuna Salad

Ingredients
  

  • 10 oz can tuna in spring water
  • 1 cup corn kernels
  • 3 tablespoons red onion (finely diced)
  • 3 tablespoons cilantro (chopped)
  • ½ cup plain Greek yogurt
  • ½ teaspoon garlic powder
  • 1 teaspoon Dijon mustard (whole grain) (or to taste)
  • Juice of one lime
  • Salt and black pepper (to taste)

Instructions
 

  • In a large mixing bowl, mash the tuna with a fork.
  • Add the corn, chopped onion, and cilantro.
  • In a separate bowl, whisk together the yogurt, garlic powder, lime juice, and mustard.
  • Add the yogurt sauce to the salad and mix well to combine. Taste and add salt and/or black pepper, if needed.
  • Serve and enjoy.
