Double Chocolate Brownies

These Double Chocolate Brownies are rich, moist, healthy, and extremely satisfying. Zucchini is the secret ingredient!

Ingredients
  

  • cup creamy peanut
  • cup pure maple syrup
  • ½ cup unsweetened applesauce
  • 1 large egg (room temperature)
  • 1 teaspoon pure vanilla extract
  • ½ cup cacao powder
  • ½ cup old fashioned rolled oats
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • teaspoon salt
  • 1 ½ cups finely shredded zucchini (with skin) (about 2 small zucchinis)
  • ½ cup dark chocolate chips

Instructions
 

  • Preheat the oven to 350 F and line a 8×8 pan with parchment paper. Set aside.
  • Pulse oats in blender or food processor until finely ground (oats are measured before blending).
  • In a large bowl, combine peanut butter, applesauce, egg, maple syrup and vanilla. Mix until smooth. Add shredded zucchini and mix until combined.
  • In a separate bowl, combine dry ingredients: cacao powder, ground oats, baking soda, baking powder and sea salt. Whisk until well combined.
  • Add dry ingredients into wet, mix just until combined (do not over mix). Stir in half of the chocolate chips.
  • Pour batter into your prepared baking pan and sprinkle remaining chips on top.
  • Bake for 30-35 minutes until the brownies are puffed up and fluffy. Remove, let cool for about 30 minutes, slice, and serve.
