Easy Speculoos Tiramisu

Based on the classic Italian dessert, this Speculoos Tiramisu combines the irresistible flavors with the spiced charm of Speculoos cookies.

Ingredients
  

  • 16 Lotus Biscoff biscuits/cookies
  • ½ cup Biscoff cookie butter
  • 1 cup strong coffee (warm)
  • ½ cup heavy whipping cream
  • 1 cup mascarpone
  • 2 ½ ablespoons confectioners sugar
  • ¼ teaspoon vanilla extract
  • Cocoa powder for dusting

Instructions
 

  • In a medium bowl, combine whipping cream, confectioners sugar, and vanilla. Whip into soft peaks, then add mascarpone and mix to combine.
  • Spoon a layer of the mascarpone cream into four serving glasses, roughly smoothing the top.
  • One at a time, dip four biscuits into the coffee, then place on top of mascarpone mixture in each glass. If needed, snap the cookies to fit before you dip them.
  • Spread the cookie butter onto four more biscuits and place these on top of the other cookies in the glasses. If needed, snap the cookies to fit.
  • Then add another layer of mascarpone cream and repeat with a layer of coffee-soaked biscuits and cookie buttered biscuits.
  • Finish with a final layer of mascarpone cream.
  • Refrigerate for 2-3 hours (or overnight) to set, this allows the biscuits to soften then dust the tops with cocoa powder to serve.
