- 2 cups fresh strawberries (washed, trimmed, and sliced)
- 2 tablespoons chia seeds
- 1 tablespoon fresh lemon juice
- Maple syrup or honey (to taste)
Add strawberries and lemon juice to a saucepan over medium-high heat and cook until the berries start to break down and the mixture is bubbling. You can use the fork or potato masher to mash the berries.
Stir in the chia seeds. Then taste, and add maple syrup or honey.
Remove from heat and let cool to allow the jam to thicken, about 5-10 minutes.
Store in a glass jar in the refrigerator for up to one week.
