Mediterranean Cod
This easy Mediterranean Cod recipe is full of incredible flavors, amazing vegetables and can be made in 20 minutes.

- 1 medium zucchini (sliced)
- 3 (6-ounce) cod filets
- Salt and ground black pepper (to taste)
- 1 lemon (thinly sliced)
- ¼ red onion (thinly sliced)
- 1 tablespoon dry thyme
- 15 olives (halved)
- 15 grape tomatoes (halved)
- 2 tablespoons olive oil
Preheat the oven to 400°F (200°C). Fold a 12x16-inch sheet of parchment paper in half and open it. You will need three sheets. Add several slices of zucchini in the center of one half and top with a piece of cod. Season with salt and pepper.
Top each cod filet with 2 to 3 lemon slices, 1/3 of the onions, 1/3 of the olives, and 1/3 of the tomatoes (these can fall to the sides). Drizzle a little olive oil and top each with 1/3 tablespoon of thyme.
Fold the top half of the parchment paper over the bottom half, then tightly roll up the edges around the cod. Repeat this process with the other 2 pieces of cod.
Place the 3 packets on a baking sheet and bake for 14 to 18 minutes (depending on thickness of cod).
Use a knife to cut the center of each parchment packet before serving.
