Mediterranean Potatoes

These easy Mediterranean Potatoes are perfectly crispy with just the right amount of seasoning. They are the perfect side dish for any easy meal.

Ingredients
  

  • 2 lbs yellow potatoes (sliced into wedges)
  • ½ cup water
  • ¼ cup olive oil
  • 2 lemons (juiced)
  • 4 cloves garlic (minced)
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper

Instructions
 

  • Preheat the oven to 400°F.
  • Place potato wedges in a 9x13-inch deep baking dish.
  • To a bowl, add water, olive oil, lemon juice, garlic, and oregano; whisk to combine. Pour mixture over the potatoes and season with salt and pepper.
  • Bake uncovered for 40 minutes, or until the potatoes are tender. Toss gently 2-3 times during baking. Garnish with fresh herbs and lemon slices, if desired, and serve.
