Dry ingredients
- 2 cups white whole wheat flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
Wet ingredients
- ⅓ cup light olive oil
- ½ cup applesauce (unsweetened)
- ¾ cup maple syrup
- ½ cup sour cream
- 2 teaspoons vanilla extract
- 2 eggs
Preheat your oven to 350 °F. Line the bottom with parchment paper or grease a 9x13-inch sheet pan.
Add all of the dry ingredients to a mixing bowl and stir together.
Add all of the wet ingredients to a separate mixing bowl and whisk together. Then, pour the wet ingredients into the dry and whisk for about 30 seconds, until you have a batter.
Pour the batter into the prepared pan and use a spatula to flatten the top. Add the berries to the top of the cake and transfer it to the oven.
Bake for 25-35 minutes, or until golden across the top.
Once it's cooled, slice and serve!
