- 2 pounds baby red potatoes (diced into 1/2-inch pieces)
- ½ cup celery (chopped)
- 2 tablespoons red onions (finally chopped)
- 2 teaspoons Dijon mustard (or to taste)
- 1 cup plain Greek yogurt
- ¼ cup fresh dill (chopped)
- Salt and cracked black pepper (to taste)
Place diced potatoes in a medium pot. Cover them with water and add a pinch of salt. Bring the potatoes to a boil and cook for 15-20 minutes, or until potatoes are easily pierced with a fork.
Drain potatoes and let them cool for at least 30 minutes.
Yogurt dressing: stir Dijon mustard, Greek yogurt, red onions, salt, and black pepper together in a small bowl.
Add potatoes (cooked and cooled), celery, yogurt dressing, and dill to a large bowl and stir to combine. Taste and add salt and black pepper, if needed.
