Roasted Vegetables
The BEST way to roast vegetables – perfectly tender and packed with so much flavor!
Prep Time 10 minutes mins
Cook Time 30 minutes mins
- 2 bell peppers (cut into medium chunks)
- 1 medium red onion (cut into medium chunks)
- 2 medium zucchinis (cut into 1/3 inch slices)
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- 1 teaspoon Italian seasoning
- ⅛ teaspoon ground black pepper
- ¼ teaspoon garlic powder
Preheat oven to 375 degrees F.
In a large bowl toss vegetables with oil and seasonings.
Spread the vegetables into a single layer on a baking sheet.
Roast for about 30 minutes, or until tender.
