Tuna Melt Wrap

This Tuna Melt Wrap is a simple, quick, and versatile recipe that doesn't require special cooking skills or hard-to-find ingredients. It's delicious and satisfying!

Ingredients
  

Tuna Salad:

  • 1 (5-ounce) can tuna (in water)
  • 2 tablespoons mayonnaise (any mayo will work)
  • ¼ cup celery (diced)
  • 2 tablespoons dill pickles (diced) (or pickle relish)
  • 1 tablespoon red onion (diced)
  • 1 tablespoon chopped dill, chives and/or other herbs (optional)
  • Salt and pepper to taste

Wrap:

  • 3 whole wheat tortilla wraps (8 or 10in)
  • Handful of spinach
  • ¼ bell pepper (thinly sliced)
  • 1 cup cheddar cheese (grated)

Instructions
 

  • Drain the liquid from the canned tuna can. Then, add the tuna, mayonnaise, diced celery, diced red onion, herbs, dill pickles, salt and pepper to a medium bowl.
  • Stir all of the ingredients together until well combined.
  • In the centre of each whole wheat tortilla wrap arrange some spinach in a vertical line. Spoon 1/3 of the tuna mixture on top of the spinach, add bell pepper slices and cover everything with grated  cheese.
  • Fold the top and bottom of the tortilla over the filling.
  • Brush a griddle pan (or a non-stick frying pan) with a little oil and heat on medium-high. Add the tuna melt wraps and fry for 2-3 minutes (until the bottom crisps up), then turn and cook on the other side for another 2 -3 minutes. Enjoy!
