- 2 medium zucchini (diced)
- 2 red bell peppers (diced)
- 1 cup canned tomatoes
- 1 yellow onion (diced)
- 2 large carrots (diced)
- 1 teaspoon black pepper (or to taste)
- 1 teaspoon salt (or to taste)
- 1 tablespoon olive oil
Prepare all vegetables (diced into about 1/3 inch cubes).
Preheat a large pan with oil and add in onion and carrots. Cook until softened.
Add in bell peppers, canned tomatoes and zucchini. Season with salt and pepper.
Cook the veggies on low heat for about 60 minutes. Stir every 5-10 minutes.
The spread is best served cold and can be stored in a refrigerator for up to 2 weeks.
