Vegetable Zucchini Spread (aka Ikra)

This easy Vegetable Zucchini Spread (aka Ikra) is a versatile and delicious way to enjoy the health benefits of summer squash.

Ingredients
  

  • 2 medium zucchini (diced)
  • 2 red bell peppers (diced)
  • 1 cup canned tomatoes
  • 1 yellow onion (diced)
  • 2 large carrots (diced)
  • 1 teaspoon black pepper (or to taste)
  • 1 teaspoon salt (or to taste)
  • 1 tablespoon olive oil

Instructions
 

  • Prepare all vegetables (diced into about 1/3 inch cubes).
  • Preheat a large pan with oil and add in onion and carrots. Cook until softened.
  • Add in bell peppers, canned tomatoes and zucchini. Season with salt and pepper.
  • Cook the veggies on low heat for about 60 minutes. Stir every 5-10 minutes.
  • The spread is best served cold and can be stored in a refrigerator for up to 2 weeks.
