Chicken:
- 2 tablespoons honey
- 1 tablespoon garlic (minced)
- 2 tablespoons olive oil
- 1 tablespoon Cajun seasoning (or to taste)
- Salt (to taste)
- 5 - 6 chicken thighs (bone-in and skin-on)
Vegetables:
- 6 - 7 cups cut vegetables (carrots, potatoes, and onions)
- 1 tablespoon garlic (minced)
- 2 tablespoons olive oil
- Salt and black pepper (to taste)
Pre heat oven to 425F.
Add chicken to a bowl and add the rest of the chicken ingredients. Toss the chicken thighs well. Set aside.
Add all the vegetables to a different bowl and toss them with garlic, olive oil, salt and black pepper.
Spread vegetables out on the pan. Place the chicken thighs between the veggies and bake for 30-35 minutes or until the internal temperature of the chicken reads 165F.
