Ingredients
  

Chicken:

  • 2 tablespoons honey
  • 1 tablespoon garlic (minced)
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning (or to taste)
  • Salt (to taste)
  • 5 - 6 chicken thighs (bone-in and skin-on)

Vegetables:

  • 6 - 7 cups cut vegetables (carrots, potatoes, and onions)
  • 1 tablespoon garlic (minced)
  • 2 tablespoons olive oil
  • Salt and black pepper (to taste)

Instructions
 

  • Pre heat oven to 425F.
  • Add chicken to a bowl and add the rest of the chicken ingredients. Toss the chicken thighs well. Set aside.
  • Add all the vegetables to a different bowl and toss them with garlic, olive oil, salt and black pepper.
  • Spread vegetables out on the pan. Place the chicken thighs between the veggies and bake for 30-35 minutes or until the internal temperature of the chicken reads 165F.
