Chicken Stuffed Mushrooms
These are the BEST EVER Chicken Stuffed Mushrooms! You can also add pretty much any veggie or protein to the stuffing.

- 20 medium-sized baby Bella mushrooms
- 1 tablespoon olive oil
- ½ pound lean ground chicken or turkey
- ½ medium sweet onion (finely chopped)
- 8 ounces cream cheese (regular or low fat)
- ½ teaspoon dried thyme
- ½ teaspoon garlic powder
- ½ cup Colby cheese (grated)
- Salt and black pepper to taste
- Fresh chives for garnish (chopped)
Wipe down the mushrooms with a damp paper towel. Remove the base of each mushroom and finely chop them.
Preheat the oven to 350°F. In a large skillet add olive oil over medium heat. Then add the the ground meat and cook it for about 4 to 5 minutes until it's cooked through. Add the onions, chopped mushroom bases, spices, salt and continue to cook for a few minutes.
Stir the cream cheese into the meat mixture. It's ok if it's still warm.
Fill the mushrooms with the filling mixture. Really pack it in there until the mixture is mounded on top of each mushroom.
Place the stuffed mushrooms in a baking dish or baking pan and sprinkle each mushroom with Colby cheese.
Bake mushrooms for 20 to 25 minutes. Garnish with chives and serve while warm.
