Chicken Stuffed Mushrooms

Should I wash mushrooms to clean? Do no rinse mushrooms caps or stems with water! Mushrooms are like sponges and will absorb liquid quickly. Instead, just use a damp paper towel to remove excess dirt.

As always, I try to use pasture raised chicken and organic veggies when possible. A pasture raised chicken is a bird raised in a natural environment, allowed to roam freely, and fed on a varied diet. Chickens raised on a pasture have access to fresh air, sunshine, and open fields. Research has shown that pasture-raised chickens have higher levels of beneficial nutrients such as omega-3 fatty acids, vitamin E, and beta-carotene than conventionally raised chickens.

Chicken Stuffed Mushrooms

These are the BEST EVER Chicken Stuffed Mushrooms! You can also add pretty much any veggie or protein to the stuffing.

Ingredients
  

  • 20 medium-sized baby Bella mushrooms
  • 1 tablespoon olive oil
  • ½ pound lean ground chicken or turkey
  • ½ medium sweet onion (finely chopped)
  • 8 ounces cream cheese (regular or low fat)
  • ½ teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ cup Colby cheese (grated)
  • Salt and black pepper to taste
  • Fresh chives for garnish (chopped)

Instructions
 

  • Wipe down the mushrooms with a damp paper towel. Remove the base of each mushroom and finely chop them.
  • Preheat the oven to 350°F. In a large skillet add olive oil over medium heat. Then add the the ground meat and cook it for about 4 to 5 minutes until it's cooked through. Add the onions, chopped mushroom bases, spices, salt and continue to cook for a few minutes.
  • Stir the cream cheese into the meat mixture. It's ok if it's still warm.
  • Fill the mushrooms with the filling mixture. Really pack it in there until the mixture is mounded on top of each mushroom.
  • Place the stuffed mushrooms in a baking dish or baking pan and sprinkle each mushroom with Colby cheese.
  • Bake mushrooms for 20 to 25 minutes. Garnish with chives and serve while warm.
