Cottage Cheese Dumplings (Lazy Pierogi)

These delicious Cottage Cheese Dumplings (Lazy Pierogi) are so fast to make. They are the perfect breakfast and so easy!

Ingredients
  

  • 1 cup cottage cheese
  • 1 egg
  • ¾ cup white whole wheat flour (+ for working with dough)
  • 1 tablespoon sugar
  • 1 pinch salt (+ for boiling dumplings)

Instructions
 

  • Mash cottage cheese, egg, salt and sugar with a fork. Add flour and mix well. Transfer the dough to a floured board.
  • Roll out strings of dough and cut them into about 1-inch pieces.
  • In a saucepan, boil water and add salt. Boil the dumplings in batches, stir occasionally. After the dumplings float, cook them for 1 - 2 minutes.
  • Remove the dumplings from the water using a slotted spoon. Serve cottage cheese dumplings hot with sour cream, butter, and/or fruit.
