Ingredients
  

  • 1 large or 2 small cauliflower heads (cut into florets)
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons harissa paste
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 3 garlic cloves (minced)
  • 2 tablespoons fresh parsley (finely chopped)

Instructions
 

  • Preheat oven to 450ºF.
  • Cut the cauliflower into small florets and add to a large mixing bowl. Toss with olive oil, harissa paste, garlic, salt, and black pepper.
  • Place cauliflower onto a large rimmed baking sheet. Arrange florets in a single layer, avoiding overcrowding. Roast cauliflower for 25 minutes, tossing once after 15 minutes, until tender.
  • Garnish with fresh parsley and serve.
