- 1 large or 2 small cauliflower heads (cut into florets)
- 3 tablespoons extra virgin olive oil
- 2 tablespoons harissa paste
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 3 garlic cloves (minced)
- 2 tablespoons fresh parsley (finely chopped)
Preheat oven to 450ºF.
Cut the cauliflower into small florets and add to a large mixing bowl. Toss with olive oil, harissa paste, garlic, salt, and black pepper.
Place cauliflower onto a large rimmed baking sheet. Arrange florets in a single layer, avoiding overcrowding. Roast cauliflower for 25 minutes, tossing once after 15 minutes, until tender.
Garnish with fresh parsley and serve.
