Mushroom Gravy Recipe

Ingredients
  

  • 4 cups sliced fresh portobello mushrooms (stems and gills removed)
  • 1 cup chopped onion
  • 2 tablespoons olive oil
  • 2 cups chicken or vegetable broth
  • ½ cup half and half
  • 3 ½ tablespoons all-purpose flour
  • ¼ teaspoon dried thyme leaves
  • Salt and black pepper to taste

Instructions
 

  • Add the olive oil in a large skillet over medium-high heat. Add the mushrooms and onions and cook, stirring occasionally, until dry and tender, about 10 minutes. Season with salt and pepper.
  • Sprinkle the flour over the mushrooms with onions and cook, stirring until lightly browned, about 1 minute. Add the broth, half and half, and thyme and continue to cook until it comes to a boil and thickens, about 5 minutes. Adjust the seasoning with salt and pepper, if needed.
