There are so many reasons to love this Beet Soup (Borscht). The taste is delicious, it’s nutritious, and the color is beautiful! Beets are even considered by many to be a super food because of all the benefits they provide.

This is our family’s version of Borscht and is on the regular rotation at our house, especially during the winter months.

Beet Soup (Borscht)

This version is a healthy take on the most iconic dish of the Ukrainian cuisine – Borscht! Serve with sour cream and it can be garnished with chopped dill, parsley, or green onions.

Ingredients
  

  • 1 pound beef tri-tip or roast (cut into 3/4 inch pieces)
  • 1 medium yellow onion (peeled and finely chopped)
  • 1 medium carrot (peeled and thinly sliced)
  • 2 medium beets (peeled)
  • 2 cups green cabbage (shredded)
  • 2 medium potatoes (peeled and cubed, keep potatoes in cold water until ready to use)
  • 10 cups water
  • 1 ½ teaspoon ground sea salt (or to taste)
  • teaspoon ground black pepper (or to taste)
  • teaspoon allspice
  • ¼ teaspoon cloves

Instructions
 

  • In a large pot, add water, beets, onion, beef, salt, and black pepper. Bring water to a boil and remove the foam as soon as it boils. Once boiling, reduce heat, partially cove, and simmer for about 30 minutes.
  • Remove beets and place them on a plate to cool down. Continue simmering the soup for about 15 more minutes. Grate beets on the large grater holes.
  • Add potatoes and carrots then cook for another 10 minutes.
  • When potatoes and carrots reach desired softness, add cabbage, allspice, and cloves. Cook for about 2 minutes.
  • Return grated beets back into the pot.
  • Simmer for an additional 2-3 minutes and add more salt and black pepper to taste.

This easy baked potato recipe is a blank slate and can be topped with almost anything from Greek yogurt, sour cream, butter, chives/green onions, broccoli and/or cheese.

What is an air fryer?
An air fryer is a miniature convection oven. It is a countertop cooking appliance that combines a heating element and a powerful fan to circulate hot air around your food so that it cooks more evenly and efficiently than in a normal oven. Air fryers produce foods that are crispy outside and moist and tender inside.

Ingredients
  

  • 4 medium russet potatoes
  • ¼ teaspoon sea salt (or to taste)
  • teaspoon ground black pepper (or to taste)
  • 1 teaspoon olive oil
  • Optional toppings: sour cream, greek yogurt, butter, chili, chives/green onions, broccoli and/or cheese, etc.

Instructions
 

  • Scrub potatoes under running water then thoroughly dry with a towel.
  • Pierce the potato all over with a fork, rub with oil and sprinkle all over with salt and black pepper.
  • Add the potatoes to the air fryer basket. Cook the potatoes in a basket style air fryer at 400°F for 30 minutes. Flip the potatoes and cook them for an additional 5-15 minutes depending on size, or until the fork easily slides through to the center. Larger potatoes may take longer.
  • Serve the potatoes split open topped with your favorite toppings.

Ingredients
  

  • 2 eggs
  • 1 cup unsweetened apple sauce
  • ¼ cup honey
  • 2 tablespoons olive oil
  • 1 teaspoon vanilla extract
  • 2 cups buckwheat flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • teaspoon ground nutmeg
  • Pinch fine sea salt
  • 1 cup grated carrots

Instructions
 

  • Preheat oven to 350ºF. Use two 8”x4” oven safe paper bakewares or line a 8″x5″ loaf pan with a parchment paper.
  • In a large bowl, whisk together eggs, applesauce, honey, oil, and vanilla until combined. Add in buckwheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt and whisk until fully combined.
  • Fold in carrots.
  • For two 8”x4” oven safe paper bakeware set: divide batter and bake in preheated oven for about 25 minutes or until a toothpick inserted in the middle comes out clean.
  • For 8″x5″ loaf pan: Pour batter into prepared loaf pan and smooth over the top. Bake in preheated oven for about 45 minutes or until a toothpick inserted in the middle comes out clean.
  • Let the loaf cool.
