Preheat oven to 350 degrees and line a bread pan with parchment paper. In a large bowl, mix together the bananas, eggs, cottage cheese, maple syrup and vanilla until smooth. Then, in another bowl, combine white whole wheat flour, baking soda, baking powder, and cinnamon. Add flour mixture to the batter and mix just until well combined. Optional: fold crushed walnuts and/or chocolate chips.

Place batter into prepared pan.
- Bake
Bake until golden brown and a toothpick inserted into the center comes out clean, about 50 minutes (cover with foil after about 30 minutes).
- Cool and enjoy
