How to make

1. First, preheat the oven to 450°F. Next, heat olive oil in a medium fry pan on medium heat (for cast iron: make sure your pan is well seasoned before cooking). Add diced onion and cook for about 5 minutes or until the onion becomes translucent. Add garlic and spices and cook for one more minute.

2. Pour the can of tomatoes and juice into the pan. Season with salt and pepper and bring this rich tomato sauce to a simmer.

3. Use your large spoon to make small wells in the sauce and crack the eggs into each well. Season eggs with salt and black pepper.

4. Finally, bake for 10 to 12 minutes or until eggs are cooked to your liking and garnish with chopped cilantro.
