Gazpacho Recipe

Gazpacho is a delicious cold Spanish soup. It is refreshing and flavorful and is the perfect starter to any meal.

Ingredients
  

  • 2 cups water
  • 3 ripe tomatoes (peeled and seeded)
  • 1 medium onion (chopped)
  • ¼ English cucumber (or one small cucumber) (peeled and seeded)
  • 3 tablespoons white vinegar
  • 2 teaspoons salt (or to taste)
  • 3 garlic cloves (crushed)
  • 4 slices whole grain bread (with the crust cut off)
  • 3 tablespoons olive oil

Garnish (optional):

  • ¼ English cucumber (or one small cucumber) (diced)
  • 1 tomato (chopped)

Instructions
 

  • Combine all gazpacho ingredients and puree with an immersion hand blender (you can also puree in a blender). Chill in refrigerator for about 1 hour.
  • Garnish and serve chilled.
