Moist, flavorful, and loaded with fresh cranberries, this easy Healthier Cranberry Orange Bread is perfect for breakfast or dessert.
Choosing Wholesome Ingredients
Whole Wheat
One of the key steps in making Healthier Cranberry Orange Bread is selecting the right ingredients. Instead of regular all-purpose flour, I like using whole wheat flour. It adds a nutty depth to the bread and brings along the benefits of fiber. I like to use the King Arthur, 100% Organic White Whole Wheat Flour.
Natural Sweeteners
Swap out refined sugar for natural sweeteners like honey or maple syrup. Not only do they add sweetness, but they also contribute additional nutrients and a more complex flavor.
The Importance of Fresh Ingredients
Fresh Cranberries and Oranges
I like using fresh cranberries and oranges. Fresh fruits not only enhance the taste but also provide a dose of vitamins and antioxidants. The natural juiciness of the fruits will also keep your Cranberry Orange Bread moist.
Goodness of Cranberries
Many people consider cranberries to be a superfood due to their high nutrient and antioxidant content: Health Benefits of Cranberries. Incorporating cranberries into your desserts not only adds a burst of flavor but also brings a nutritional boost.
Gather all Ingredients for this Cranberry Orange Bread
To get started, you’ll need the following ingredients: maple syrup, light olive oil, vanilla extract, eggs, sour cream, orange juice, zest of one large orange, salt, baking powder, cinnamon, white whole wheat flour, and cranberries. For Graze: powdered sugar, freshly squeezed orange juice, and orange zest.
How to make this Healthier Cranberry Orange Bread
1. First, preheat the oven to 325 F and line a 8×4 loaf pan with parchment paper. Set aside. Next, in a small bowl, toss the cranberries with 1 teaspoon of flour. Set aside. In a large bowl, combine the oil, eggs, vanilla, maple syrup, sour cream, orange juice, and orange zest and beat together with a hand-held blender on medium speed for 2-3 minutes.
2. Then, in another bowl, combine salt, baking powder, cinnamon and flour. Add flour mixture to the batter 1/3 at a time, letting the flour incorporate with each addition and continue mixing just until well combined. Fold cranberries into batter. Pour batter into prepared pan. Bake until golden brown and a toothpick inserted into the center comes out clean, about 80 minutes. Remove from the oven. When the bread has sat for about 15 minutes, transfer to a cooling rack to cool completely.
3. Finally, glaze: mix together orange juice, orange zest and powdered sugar. If needed, add more orange juice or powdered sugar until you reach the desired consistency. Pour glaze over bread.
