Peach Blueberry Crisp

This Peach Blueberry Crisp is both fresh and delicious. This crisp is loaded with juicy peaches and sweet blueberries, then, topped with a buttery, golden oat crisp.

Peach season is here and it’s the perfect time to be enjoying this delicious fruit. Peaches are soft and sweet, smell divine, taste good cooked or fresh, and full of vitamins, minerals and antioxidants. They boast lots of potential health benefits, including improved digestion, a healthy heart, a strong immune system and improved allergy symptoms.

This sweet and flavorful Peach Blueberry Crisp is filled with summer’s freshest fruits and topped with a buttery, golden oat crisp. You’ll appreciate how easily this crisp comes together:
1. First, combine peaches, blueberries, honey, lemon juice and zest in large bowl.

2. Sprinkle with cornstarch and toss until fruit is coated.
3. Place fruit in an ungreased dish (I used a 9×13-inch baking dish).

4. Next, combine the topping ingredients in the same bowl. Sprinkle over fruit.

5. Bake about 40 – 45 minutes or until topping is golden brown and fruit is tender.
6. Serve with a scoop of ice cream, frozen yogurt, or simply on its own.

Ingredients
  

For the Filling:

  • 5 peaches (pitted and sliced)
  • 1 cup blueberries
  • ½ lemon (zested and juiced)
  • 2 teaspoons cornstarch
  • 4 tablespoons honey

For the Topping:

  • 1 cup uncooked rolled oats
  • cup whole wheat flour
  • cup light brown sugar
  • 1 teaspoon cinnamon
  • ¼ cup butter (melted)
  • Pinch of fine sea salt (if using unsalted butter)

Instructions
 

  • Heat oven to 375F degrees.
  • Combine peaches, blueberries, honey, lemon juice and zest in large bowl. Sprinkle with cornstarch. Toss until fruit is coated.
  • Place fruit in an ungreased dish. I used a 9×13-inch baking dish.
  • For the topping, combine the topping ingredients in the same bowl. Sprinkle over fruit.
  • Bake about 40 – 45 minutes or until topping is golden brown and fruit is tender.
