This tasty Vegetable Zucchini Spread (aka Ikra) is one of my favorite healthy squash dips. It’s easy to make, vegetarian, and full of flavors.

- Canned tomatoes, black pepper, salt, and olive oil.
How to make this Recipe:
- Prepare
First, prepare all vegetables (diced into about 1/3 inch cubes).
- Cook onion and carrots
Preheat a large pan with oil and add in onion and carrots. Cook until softened.
- Add bell peppers, canned tomatoes and zucchini

- Finish cooking
Cook the veggies on low heat for about 60 minutes. Stir every 5-10 minutes.
- Enjoy
