  • 2 slices 100% whole wheat bread (toasted)
  • cup cottage cheese

  • Chopped toasted nuts
  • Mint leaves

Instructions
 

  • Toast bread to desired crispiness.  Let cool slightly, then spread cottage cheese evenly over the toast slices. Drizzle with honey or maple syrup.
  • Top the toast slices with sliced fresh fruit (you can use one fruit or a mix). Sprinkle the toast with your favorite seeds and/or nuts. Garnish with mint leaves, if desired.

To make this recipe, you will need the following ingredients: frozen puff pastry sheet (store bought), coconut sugar, and ground cinnamon.

How to make Puff Pastry Cinnamon Twists

1. First, preheat oven to 400 degrees F. Line two baking sheets with parchment paper and set aside.  In a small bowl, combine the sugar and ground cinnamon. Unfold puff pastry dough sheet onto a lightly floured surface. Sprinkle cinnamon sugar evenly over dough and roll gently with a rolling pin. With a sharp knife (or pizza cutter), slice pastry sheet from top to bottom into 12 strips. Twist each strip about five times around.

2. Place twists 2 inches apart on two prepared baking sheets (they will spread and untwist slightly when baking). Bake for 13-15 minutes, or until lightly golden brown. Serve cinnamon twists warm or at room temperature.

Flautas are a popular Mexican dish consisting of rolled tortillas filled with various ingredients such as shredded meat (typically chicken, beef, or pork), cheese, or beans. The filled tortillas are tightly rolled into a flute-like shape and then fried until they are crispy and golden brown.

To make this recipe, you will need the following ingredients: cooked chicken, salsa (any type), Mexican-blend cheese, cream cheese, and whole wheat tortilla wraps (corn tortillas or low carb tortillas will work too).

How to make Air Fryer Flautas

1. First, add shredded chicken, salsa, shredded cheese, and softened cream cheese to a bowl. Stir well until ingredients are thoroughly incorporated. Preheat air fryer to 380° F (if your air fryer requires).

2. Spoon 1-2 tablespoons of the chicken mixture horizontally across center of each tortilla. Cover the filling with bottom edge of tortilla and continue rolling until the tortilla is completely rolled. Set aside, seam-side down. Repeat until all flautas have been formed. Next, spray air the fryer basket with cooking spray. Place the flautas in your air fryer basket making one flat layer (working in batches if needed). Spray tops of tortillas with avocado oil cooking spray, then place basket in preheated air fryer.

3. Run the Air fryer at 380 degrees F for about 9 minutes or until the tortillas are golden brown and crispy. When ready, transfer flautas to a plate or a serving tray and repeat the process until all flautas have been air fried. Finally, top flautas with additional salsa, sour cream, hot sauce, queso, diced tomatoes and/or avocados and serve warm.
