Gather all Ingredients

To get started, you’ll need the following ingredients:

  • White whole wheat flour. My favorite white whole wheat flour is the King Arthur, 100% Organic White Whole Wheat Flour.
  • Baking powder, baking soda, cinnamon, nutmeg, sea salt, vanilla extract.

  • Greek yogurt is regular yogurt that has a thicker, more dense consistency.
  • Optional: chopped pecans

How to make this Recipe:

  1. Preheat the oven and prepare pans

    Preheat the oven to 350°F and line the bottom with parchment paper two 9-inch round cake pans.

  2. Prepare dry ingredients

    In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg and salt.

  3. Prepare wet ingredients

    In another bowl, whisk the eggs and then whisk in the applesauce, maple syrup, milk, oil, and vanilla. Stir in the carrots.

  4. Mix all ingredients

    Pour the wet ingredients into the bowl of dry ingredients and stir until just combined. Stir in the raisins.

  5. Bake

    Pour the batter into the pans and bake for 20 to 25 minutes, or until a toothpick inserted comes out clean.

  6. Frost and enjoy
