- Salt, black pepper, dry thyme, and olive oil.
- Lemon, red onion, olives, and grape tomatoes.
How to make this Recipe:
- Assemble the packets
Preheat the oven to 400°F (200°C). Fold a 12×16-inch sheet of parchment paper in half and open it. You will need three sheets. Add several slices of zucchini in the center of one half and top with a piece of cod. Season with salt and pepper.
- Add lemon slices
Top the cod with 2 to 3 lemon slices.
- Add toppings
Top lemon slices with a 1/3 of onion, 1/3 of olives, and 1/3 of tomatoes (these can fall to the sides). Drizzle a little olive oil and top with 1/3 of thyme.
- Fold, seal and bake
Fold the top half of the parchment paper over the bottom half, then tightly roll up the edges around the cod. Repeat this process with the other 2 pieces of cod. Place the 3 packets on a baking sheet and bake for 14 to 18 minutes (depending on thickness of cod).
- Serve.
Use a knife to cut the center of each parchment packet before serving.
