These Chocolate-Covered Raspberry Bites are a delicious treat that combines the tartness of raspberries with the sweetness of chocolate.

Ingredients
  

  • 6 ounces fresh raspberries
  • 1 tablespoon chia seeds
  • 5 ounces dark chocolate
  • 1 teaspoon coconut oil
  • ¼ cup almonds (roughly chopped)

Instructions
 

  • Line a sheet pan with parchment paper and set aside. In a small bowl, mash the raspberries with a fork until they are broken down. Add in chia seeds and stir until well combined. Let this sit for 5-10 minutes to thicken.
  • Scoop about 1 tablespoon of the raspberry-chia mixture onto the baking sheet. You should end up with 7-9 pieces.  Place in the freezer for one hour or until set through.
  • Place the chocolate and coconut oil in a small bowl and melt in the microwave for 30-60 seconds, stirring after the first 30-seconds.
  • Dip the frozen raspberry-chia bites into the chocolate until coated and place back on the prepared baking sheet. Sprinkle chopped almonds over the wet chocolate. Repeat.
  • Place the bites back into the freezer for about 20 minutes, or until the chocolate is set.

  • 1 tablespoon light olive oil
  • 1 small yellow onion (finely chopped)
  • 4 cups fresh whole kernel corn (from about 3 ears of corn) (or 2 cans 15.25 oz each)
  • 1 cup half and half
  • 1 ½ tablespoons cornstarch
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper (or to taste)
  • Pinch ground nutmeg
  • teaspoon cayenne pepper (or to taste)

Instructions
 

  • If using fresh corn, shuck the corn and carefully cut the kernels off the cob.
  • Add the olive oil in a large non-stick skillet over medium-high heat.
  • Add chopped onion and sauté for about 4 to 5 minutes. Stir often. Add corn and cook for additional 2 to 3 minutes or until heated through.
  • In a measuring cup, whisk cornstarch with half and half. Add to corn, stir in well, and cook until the mixture thickens. Season with salt, pepper, cayenne pepper, and ground nutmeg.

Cover again and cook for another 2 to 3 minutes until lightly golden brown.
