What is tahini?
Tahini is a thick paste made from ground sesame seeds. It is a staple ingredient in Middle Eastern and Mediterranean cuisines and is widely used in dishes like hummus, baba ganoush, falafel, and various sauces and dressings. Tahini has a rich, nutty flavor and very creamy texture.

There’s so much more to tahini than just being one of the main ingredients of hummus. It’s absolutely incredible in sweet treats, and these Sesame Cookies are a wonderful introduction into the world of sweet tahini treats. This is an easy recipe that you can make in just about 20 minutes. These cookies are mixed, rolled, covered with sesame seeds, and flatten with your hand before baking.

Sesame Cookies Recipe

These Sesame Cookies are perfectly nutty and the ideal balance of salty and sweet. This is an easy recipe that you can make in just 20 minutes!

Ingredients
  

  • ½ cup tahini
  • cup honey
  • ¼ teaspoon vanilla extract
  • 1 large egg
  • 1 ½ cups whole wheat flour (I like to use heritage whole wheat flour)
  • 1 teaspoon baking soda
  • teaspoon sea salt
  • ¼ cup sesame seeds

Instructions
 

  • Preheat oven to 350F.
  • In a large mixing bowl, combine the tahini, honey, vanilla, and egg. Next, add the whole wheat flour, baking soda, and sea salt and mix until combined.
  • Use an ice cream scooper to scoop large balls and roll them in your hands to make them smooth and round.
  • Spread the sesame seeds out on a plate in a single layer. Roll the cookie dough ball around the plate until it’s completely covered with sesame seeds. Place it on a baking sheet lined with parchment paper.
  • When you have about 8 on your sheet, use your hand to flatten them and then bake for 10 – 12 minutes until the edges are golden brown.
  • Cool cookies on the baking sheet for about five minutes before transferring to a cooling rack.

These Pinwheel Sandwiches are a colorful appetizer or snack with a delicious combination of flavors. These sandwiches are simple to make and share.

Ingredients
  

  • 1 package (8 ounces) cream cheese (reduced fat – 1/3 less fat) (softened)
  • cup roasted sweet red peppers (chopped)
  • cup Kalamata olives (chopped)
  • cup green onions (chopped)
  • Salt and pepper to taste
  • 4 flour tortillas (whole wheat)(7 or 10 inches)
  • Salsa (optional)

Instructions
 

  • In a bowl mix together the cream cheese, olives, green onions, roasted sweet red, and seasonings until it is smooth and well combined.
  • Spread over tortillas and roll up tightly. Wrap in plastic wrap and place in the fridge for a couple of hours.
  • Unwrap. Using a serrated knife, cut into 1/2- to 3/4-in. If desired, serve with salsa.

Chocolate-Covered Raspberry Bites

These Chocolate-Covered Raspberry Bites are a delicious treat that combines the tartness of raspberries with the sweetness of chocolate.

Ingredients
  

  • 6 ounces fresh raspberries
  • 1 tablespoon chia seeds
  • 5 ounces dark chocolate
  • 1 teaspoon coconut oil
  • ¼ cup almonds (roughly chopped)

Instructions
 

  • Line a sheet pan with parchment paper and set aside. In a small bowl, mash the raspberries with a fork until they are broken down. Add in chia seeds and stir until well combined. Let this sit for 5-10 minutes to thicken.
  • Scoop about 1 tablespoon of the raspberry-chia mixture onto the baking sheet. You should end up with 7-9 pieces.  Place in the freezer for one hour or until set through.
  • Place the chocolate and coconut oil in a small bowl and melt in the microwave for 30-60 seconds, stirring after the first 30-seconds.
  • Dip the frozen raspberry-chia bites into the chocolate until coated and place back on the prepared baking sheet. Sprinkle chopped almonds over the wet chocolate. Repeat.
  • Place the bites back into the freezer for about 20 minutes, or until the chocolate is set.
