Gather all Ingredients
To get started, you’ll need the following ingredients:
- Mascarpone cream: heavy whipping cream, mascarpone, confectioners sugar, and vanilla extract.
- Biscoff biscuits/cookies and cookie butter. Did you know that the Biscoff brand, and its parent company Lotus, began in a bakery in Lembeke, Belgium, in 1932? Lotus is still headquartered in the small town, and is run by the same family.
- Coffee: a medium to dark roast coffee will be the best option as you will get the most prominent coffee flavors.
- Cocoa powder. Did you know that cocoa powder is an end product after cacao beans have been fermented, roasted and pressed to extract most of the cocoa butter?
How to make this Recipe:
- Prepare Mascarpone Cream
In a medium bowl, combine whipping cream, confectioners sugar, and vanilla. Whip into soft peaks, then add mascarpone and mix to combine. Spoon a layer of the mascarpone cream into four serving glasses, roughly smoothing the top.
- Dip Biscuits into the Coffee
One at a time, dip four biscuits into the coffee, then place on top of mascarpone mixture in each glass. If needed, snap the cookies to fit before you dip them.
- Spread the Cookie Butter
Spread the cookie butter onto four more biscuits and place these on top of the other cookies in the glasses. If needed, snap the cookies to fit.
- Add another layer
Then, add another layer of mascarpone cream and repeat with a layer of coffee-soaked biscuits and cookie buttered biscuits.
- Finish and Enjoy
Finish with a final layer of mascarpone cream. Finally, refrigerate for 2-3 hours (or overnight) to set, this allows the biscuits to soften then dust the tops with cocoa powder to serve.
