- Pesto: Tomato Pesto is a unique blend of tomatoes, olive oil, nuts, cheese and Italian spices. Traditional pesto is made with basil leaves, garlic, pine nuts, olive oil, salt, and Parmesan. I really think the it makes pretty much everything taste better.
- Seasoning: salt and black pepper
- Optional: Parmesan cheese and basil or parsley.
How to make this Pesto Cod Recipe:
- Prepare
First, preheat oven to 400°F . Line a sheet pan with parchment paper and set aside. Next, pat the cod dry of excess moisture with paper towels. Place the cod pieces onto the prepared sheet pan and season with salt and black pepper. Distribute pesto over top of each piece of cod.
- Bake
Finally, bake the cod for 16 to 18 minutes (depending on the thickness of your fish) or until it’s cooked through. Garnish with grated Parmesan cheese and/or parsley (optional).
