How to make Baked Feta Chicken
- Make the rub
First, heat oven to 425 degrees F. Make the rub: in a small bowl, combine the rub ingredients. Whisk until everything is incorporated. Then season the chicken thighs with salt. Then, rub the chicken with the tomato rub on both sides.
- Arrange the sliced onions
Next, prepare a 8” X 11” baking dish: brush the bottom of the dish with extra virgin olive oil. Arrange the sliced onions on the bottom.
- Arrange the chicken
Arrange the chicken on top of the onions. Pour in about ¼ cup of water to the baking dish.
- Bake
Finally, bake in the middle of a rack for about 35 minutes. Make sure chicken reaches an internal temperature of 165 degrees F. Enjoy!
