- Potatoes. I use Yukon gold potatoes, peeled. Russet potatoes or Idaho potatoes can also be used instead.
- Cottage Cheese: I used cottage cheese with 2% milk fat. It adds creaminess, richness, and lots of flavor.
- Milk: whole milk is what makes these mashed potatoes extra creamy.
- Seasoning: salt and black pepper, to taste.
- Optional Garnish: fresh parsley and/or fresh chives.
How to make Cottage Cheese Mashed Potatoes:
- Cook potatoes
Add the potatoes into a large pot and cover with water. Next, add 1 teaspoon of salt and bring to a boil. Turn heat to medium and cook until the potatoes are fork-tender about 15-20 minutes.
- Prepare cottage cheese
While the potatoes are cooking, whip the cottage cheese in a food processor until it’s completely smooth. Set aside.
- Mash, mix, garnish and enjoy!
Once the potatoes are cooked, strain them and transfer the potatoes back into the pot. Add the milk to the potatoes and use an electric mixture to mash the potatoes on high until smooth. Add the whipped cottage cheese, pepper, and remaining salt (or to taste) to the potatoes and mix until combined. Garnish with fresh parsley and/or chives and enjoy.
