Leftover Turkey Noodle Soup

Comforting Leftover Turkey Noodle Soup made completely from scratch! This noodle soup is a great way to use up a bunch of what you already had on hand for the holiday.

Ingredients
  

For the Broth

  • 1 turkey carcass (leftover from a carved turkey, all meat removed)
  • 16 cups water
  • 1 teaspoon salt (or to taste)
  • ¼ teaspoon black pepper (or to taste)

For the Soup

  • 2 to 3 cups cooked turkey meat (chopped, white or dark)
  • 1 medium onion (chopped)
  • 2 stalks celery (diced)
  • 3 medium carrots (chopped)
  • 1 cup egg noodles (dry)
  • 1 cup frozen peas (thawed)
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper (or to taste)
  • ¼ teaspoon dried ground thyme (or to taste)
  • ¼ teaspoon dried ground cloves (or to taste)
  • Fresh parsley (chopped, for garnish)

Instructions
 

  • Make the broth: In a large soup pot, add turkey carcass and water. Season with salt and pepper. Cook for about 1.5 hours, covered over medium-low heat. Remove the carcass from the soup using tongs or a slotted spoon. All there should be left in the pot should be the broth.
  • Make the soup: Add onion and celery to a pot.  Bring it to a boil and let simmer for 15 minutes.
  • Add turkey meat, carrots, thyme, cloves and noodles. You might need to add a couple more cups of water as some of it may have evaporated. Bring to a boil and simmer over medium heat for about 8 more minutes, or until noodles are cooked.
  • Try and season with salt and black pepper to taste.  Stir in peas, garnish with parsley, and enjoy!

  • 2 tablespoons olive oil
  • 1 yellow onion (finely diced)
  • 2 celery stalks (diced)
  • 2 medium carrots (diced)
  • 3 cloves of garlic (minced)
  • 4 cups vegetable broth
  • 1 (14.5 oz) can diced tomatoes
  • 3 cups diced potatoes (about 3 potatoes)
  • 2 teaspoons Italian seasoning
  • 1 teaspoon sea salt (or to taste)
  • ½ teaspoon dried thyme
  • ¼ teaspoon black pepper (or to taste)
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon red pepper flakes (or to taste)
  • 1 (15 oz) can cannellini beans (drained and rinsed)
  • Juice of 1/2 lemon
  • 3 cups kale (chopped)
  • ½ cup fresh parsley (chopped)

Instructions
 

  • Heat a large soup pot over medium heat and add olive oil. Stir in onion, celery, carrots, and garlic. Allow to cook for 7 minutes, stirring occasionally.
  • Pour in veggie broth, diced tomatoes with juice, and all of the seasonings. Stir well and bring to a boil. Once boiling, stir in the potatoes and reduce heat to a simmer. Cover the pot and simmer for 20 minutes, until potatoes are tender.
  • Uncover the pot and stir in the beans and the lemon juice. Allow to simmer for 5 minutes.
  • Stir in kale and allow to cook for 5 more minutes. Try and season with salt and black pepper to taste. Add parsley and serve.

Ingredients
  

  • 1 prepared pie crust (for 9 or 10 inch pie dish) (thaw and prepare for a single crust pie according to package directions)
  • 3 cups shelled pecans (pecan halves)
  • 3 eggs
  • ¾ cup pitted dates
  • ¾ cup pure maple syrup
  • ¼ cup light brown sugar
  • 2 tablespoons unsalted butter (melted)
  • 1 tablespoon vanilla extract
  • teaspoon salt

Instructions
 

  • Preheat the oven to 350˚F. Place the pecans on a rimmed baking sheet and toast for 5 minutes. Remove from heat and let cool slightly.
  • To the container of a high speed blender or food processor, add eggs, dates, maple syrup, brown sugar, butter, vanilla extract and salt. Process for 2 to 3 minutes, or until smooth.
  • Add about 2 ½ cups of toasted pecans to the prepared pie crust. Reserve the full pecans for decorating. Pour the egg mixture over the pecans, then gently shake the pan to spread the filling into an even layer. Use the remaining pecans to decorate the top of the pie.
  • Bake at 350˚F for about 35 minutes, or until the center of the pie is set. You will know your pecan pie is done when you can shake it gently and it is not jiggly. Let cool for about 1 hour before serving.
