  • 1 whole wheat tortilla (8 or 10 inch)
  • 2 – 3 tablespoons pizza sauce
  • ½ cup mozzarella cheese (shredded)
  • ¼ teaspoon Italian seasoning
  • Optional Toppings: cherry (or small) tomatoes, pepperoni, chicken sausage, shredded chicken (cooked), peppers, mushrooms, etc.
  • Optional Garnish: chopped fresh basil or drizzle of pesto

Instructions
 

  • Preheat your air fryer to 400°F (in needed). Spray the bottom of the air fryer basket with non-stick cooking spray (it ensures a crispy bottom).
  • Place tortilla on a flat surface. Use a spoon to spread the pizza sauce across the tortilla. Top with shredded mozzarella cheese and your desired toppings. Sprinkle Italian seasoning.

  1. Ganache Frosting Preparation

    Place chocolate chips in a heat proof bowl. Pour the heavy cream into a small saucepan and place over medium heat. Heat until it simmers, then pour over the chopped chocolate. Stir together until the chocolate has melted completely. Refrigerate until it sets and thickens.

  2. Prepare and preheat

    Preheat the oven to 350°F. Line a 12-cup muffin pan with cupcake liners. Set aside.

  3. Mix cupcake ingredients

    In a large bowl, whisk the eggs, maple syrup, light brown sugar, oil, buttermilk, and vanilla together until completely smooth. Then, in another bowl whisk the flour, cocoa powder, espresso powder, baking powder, baking soda, and salt together in a large bowl until thoroughly combined. Add flour mixture to the batter and mix just until well combined. Do not over mix. The batter will be thin.
