Shrimp Tacos Recipe

This Shrimp Tacos Recipe is packed with flavor, made with healthy ingredients and quick to put together.

Ingredients
  

  • 1 pound uncooked medium shrimp (peeled and deveined)
  • 1 cup kale (stems removed and chopped)
  • 1 tablespoon olive oil
  • 1 clove garlic (pressed)
  • ¼ teaspoon sea salt (or to taste)
  • ¼ teaspoon paprika
  • teaspoon cayenne pepper
  • 6 to 8 flour tortillas (whole wheat)
  • 2 cups shredded cabbage
  • Garnishes (optional): avocados, cilantro, and/or sour cream (or Greek yogurt)

Avocado lime sauce:

  • 1 avocado
  • 1 clove garlic (peeled and roughly chopped)
  • 1 fresh jalapeño (seeds and membranes removed, roughly chopped)
  • ½ cup fresh cilantro (chopped)
  • 2 tablespoons fresh lime juice
  • teaspoon sea salt (or to taste)
  • teaspoon ground black pepper (or to taste)
  • 2 tablespoons water

Instructions
 

  • Rinse and pat the shrimp dry. In a large bowl, combine the shrimp, garlic, salt, paprika, and cayenne pepper. Toss to coat evenly. Let rest while you prepare the avocado lime sauce.
  • In a food processor with a steel blade, process the avocado, garlic, jalapeño, cilantro, salt, black pepper, lime juice, and water. Taste and adjust seasonings and water as desired.
  • In a large nonstick skillet over medium high, heat the olive oil. Add the shrimp and kale and sauté just until the shrimp is cooked through, about 4 minutes. Do not overcook! Transfer the shrimp and kale immediately to a plate.
  • Warm the tortillas: preheat a non-stick pan to medium heat. No butter or oil required. Place one tortilla at a time in the pan for approximately 30 seconds until slightly golden and the tortilla begins to puff. Turn the tortilla over, and cook for an additional 30 seconds.
  • Build tacos by arranging cabbage, avocado lime sauce, and shrimp with kale over each toasted tortilla.
  • To serve, you can add extra avocado lime sauce, avocados, cilantro, and/or sour cream (or Greek yogurt). Enjoy immediately.

  • 4 cups kefir (low-fat, plain)
  • 4 cup water

Plus, it’s way easier to make this fancy side dish than you might think! Essentially baked potatoes but sliced into thin, even segments that create a fanlike shape.

Why are they called Hasselback potatoes?
Hasselback potatoes got their name from the restaurant in Stockholm, Swedish where they were invented. The restaurant was called Hasselbacken and these potatoes were first served there in 1953.

What is the best type of potatoes to use?
I found that using the right kind of potato for this recipe was key. The Russet potato was the best choice because of its starchy flesh and creamy texture. If you choose to leave the skin on, make sure your potatoes are washed well before cooking. I like to leave the skin on because the potato skin has more nutrients than the interior of the potato.

Air Fryer Hasselback Potatoes

These Air Fryer Hasselback Potatoes become extra-crispy on the outside while their interiors remain creamy and moist.

Ingredients
  

  • 3 medium Russet potatoes washed and scrubbed
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper (or to taste)

Instructions
 

  • Place a potato on a cutting board between two wooden spoons or chopsticks. Nestle a potato between them and, using a sharp knife, slice them into very thin slices. The wooden spoon handles or chopsticks will stop your knife from cutting the potato all the way through. Repeat with remaining potatoes.
  • In a small bowl combine the olive oil, Italian seasoning, garlic powder, salt and black pepper.
  • Place the potatoes at the bottom of your air fryer basket and brush generously with the olive oil mixture all around.
  • Cook the potatoes in a basket style air fryer at 380°F for 20-30 minutes or until the potatoes are tender when pierced with a fork.
