This bright Asian Cucumber Salad is so simple and packs in delicious flavor! These crispy cucumbers are a light and cool salad that goes with almost anything.

Cucumbers are the star of this recipe. Their mild and refreshing flavor helps them pair well with the tangy Asian-inspired dressing, leaving you with a flavor-rich dish that has plenty of crunch. I have so many cucumbers coming from our garden this summer. We love cucumbers, and they are much more versatile than you might realize. This Asian Cucumber Salad is a great way to use up a lot of cucumbers.

Asian Cucumber Salad

Crispy cucumbers: sprinkle cucumber slices with sea salt and toss. Let cucumbers sit with the salt for about 15 minutes. They will release their excess moisture. Then drain out as much liquid as you can. Discard drained liquid. This will help make them crispy. Don’t ignore this step.

Asian Cucumber Salad

This Asian Cucumber Salad recipe is a really simple and beautiful side dish. It is light and refreshing and full of vibrant and zesty flavors.

Ingredients
  

  • 6 Persian cucumbers (or 6 any medium cucumbers, or 3 English cucumbers) (sliced)
  • ½ teaspoon sea salt
  • 3 teaspoons rice vinegar
  • 1 teaspoon olive oil or sesame oil
  • 1 ½ teaspoon soy sauce
  • 1 teaspoon honey
  • 1 teaspoon minced garlic
  • ½ teaspoon grated fresh ginger
  • ¼ cup green chives (chopped)
  • Red pepper flakes (to taste)
  • ½ teaspoon sesame seeds

Instructions
 

  • Sprinkle cucumber slices with sea salt and toss. Let cucumbers sit with the salt for about 15 minutes. They will release their excess moisture. Then drain out as much liquid as you can. Discard drained liquid.
  • In a small bowl, whisk together the rice vinegar, oil, soy sauce, garlic, ginger, and honey.
  • Add the dressing and green chives to the cucumber slices and toss to combine. Sprinkle the red pepper flakes and sesame seeds and serve.

Mushroom Gravy Recipe

This is a rich and very savory Mushroom Gravy Recipe. The secret to any comfort meal is a flavorful gravy. And when you can make a delicious gravy from scratch, it becomes even more satisfying! It’s rich, decadent, and pairs perfectly with holiday dishes or everyday meals.

One of my favorite things about this Mushroom Gravy Recipe is just how easy it is to prepare. It comes together in less than 30 minutes. Once you realize how simple it is to put together, you just might serve it with everything.

How to make:

1. Add the olive oil in a large saucepan over medium-high heat. Next, add the mushrooms and onions and cook, stirring occasionally, until dry and tender, about 10 minutes. Season with salt and pepper.

2. Next, sprinkle the flour over the mushrooms with onions and cook, stirring until lightly browned, about 1 minute. Add the broth, half and half, and thyme and continue to cook until it comes to a boil and thickens, about 5 minutes. Finally, adjust the seasoning with salt and pepper, if needed.

There are a few prep steps to get the mushrooms ready:
1. Should I wash mushrooms to clean? Do no rinse mushrooms with water! Mushrooms are like sponges and will absorb liquid quickly. Instead, just use a damp paper towel to remove excess dirt.
2. Turn the mushroom over and remove the stem.
3. Finally, take a spoon and gently scoop out the gills. It’s best for taste and texture to remove and discard them.

Peaches are soft and sweet, smell divine, taste good cooked or fresh, and full of vitamins, minerals and antioxidants. They boast lots of potential health benefits, including improved digestion, a healthy heart, a strong immune system and improved allergy symptoms.

This sweet and flavorful Peach Blueberry Crisp is filled with summer’s freshest fruits and topped with a buttery, golden oat crisp. You’ll appreciate how easily this crisp comes together:
1. First, combine peaches, blueberries, honey, lemon juice and zest in large bowl.

2. Sprinkle with cornstarch and toss until fruit is coated.

Ingredients
  

For the Filling:

  • 5 peaches (pitted and sliced)
  • 1 cup blueberries
  • ½ lemon (zested and juiced)
  • 2 teaspoons cornstarch
  • 4 tablespoons honey

For the Topping:

  • 1 cup uncooked rolled oats
  • cup whole wheat flour
  • cup light brown sugar
  • 1 teaspoon cinnamon
  • ¼ cup butter (melted)
  • Pinch of fine sea salt (if using unsalted butter)

Instructions
 

  • Heat oven to 375F degrees.
  • Combine peaches, blueberries, honey, lemon juice and zest in large bowl. Sprinkle with cornstarch. Toss until fruit is coated.
